With so many flavors to explore, this classic spirit is being given new life in restaurants and bars across the country. While rum has for years been considered a less expensive alternative to whiskey, 2017 is the year high-end craft rum cocktails are making a comeback. According to experts at the annual Distilled Spirits Council of the United States (DISCUS) holiday event, “Rum is capable of saying, ‘I’m here too and I’m worth it’,” said Edrington brand ambassador Jordan Zimmerman, whose Scotland-based company’s portfolio includes Burgal, the Caribbean’s leading golden rum. “Premium rum is trending towards a new, higher place in terms of reputation,” Zimmerman said at the DISCUS event. “Lately, we’ve been really excited about the possibilities that rum offers,” says Montage Laguna Beach Beverage Manager Troy Smith. “We’ve expanded our selection of rums and will continue to explore this often overlooked category. There is an incredible diversity of origins, styles and flavors, which provides a wide palette from which to create cocktails.” Some of the rum cocktails currently offered at The Loft at Montage Laguna Beach include the Rationale, “which draws inspiration from the Tiki classic cocktail Navy Grog,” Smith says. “In Mosaic Bar & Grille,” Smith continues, “we’ll be featuring the Spirit of Cuba which is a nod to the standard rum punch, and Sailor’s Delight, our own take on Barbados’ favorite cocktail.” Rum is a spirit made by fermenting fresh sugar cane juice or molasses, then distilling and possibly aging depending on the producer, explains Jesus Evangelista, beverage director of Georgie at Montage Beverly Hills. “Diplomatico Exclusiva is a rum distilled in ancient copper pot stills and then aged in small oak casks for up to 12 years,” he says of the main ingredient in The Rum Key, Georgie’s version of a rum old fashioned. “This cocktail has a lush, velvety texture and leans towards the sweeter side. Don’t let it fool you, a few of these and you’ll be needing your rum key.” The options are endless for new ways to sip rum, and you don’t have to be sitting on a sandy island in the Pacific to enjoy its bevy of nuanced flavor notes. Craft Rum Cocktails Indulge in some of Montage Hotels & Resorts’ most delightful rum cocktails at home with these recipes created by their talented mixology teams. THE RATIONALE THE LOFT, MONTAGE LAGUNA BEACH Ingredients: 2 ounces grapefruit sorbet 3/4 ounce El Dorado 5-year rum 3/4 ounce Brugal Blanco Supremo rum 3/4 ounce Haleakala Maui dark rum 3/4 ounce lime 3/4 ounce simple syrup 1 ounce club soda 2 dashes Angostura bitters Method: In a snifter glass, place one small scoop of sorbet, then add the remaining ingredients, finishing with the dark rum to create a layered effect. Garnish with a large grapefruit twist and serve with a dark sugar rock candy stirrer. THE RUM KEY GEORGIE, MONTAGE BEVERLY HILLS Ingredients: 1 3/4 ounces Diplomatico Exclusiva Rum 1/2 ounce Amaro Averna 1/4 ounce Amaro Montenegro 3 dashes Reagan’s Orange Bitters 1 brown sugar cube 1 ice sphere 1 orange peel, twisted Method: Muddle bitters and brown sugar cube until well dissolved. Add spirits and stir in a mixing glass with ice. Strain and pour into the rocks glass with the ice sphere. Rub the orange peel around the rim of the glass to provide a little extra flavor, then twist and garnish. KAPALUA BUTTERFLY CANE & CANOE, MONTAGE KAPALUA BAY (Adopted from Kapalua Bay Hotel-Kapalua, Hawaii, created in 1978) Ingredients: 2 ounces Myers’s dark rum 1 1/2 ounces pineapple juice 1 1/2 ounces sweet and sour mix 1 1/2 ounces orange juice 1 ounce grenadine 1 1/2 ounces coconut cream Method: Blend everything together except 1 ounce of Myers’s rum and the grenadine. Pour grenadine in bottom of snifter glass, top with blended ingredients. Float 1 ounce Myers’s on top. To make the Kapalua Butterfly garnish, fold a half circle of pineapple (cut thinly) in half over a maraschino cherry and pierce with a cocktail spear. SKI-DIVA APEX, MONTAGE DEER VALLEY Ingredients: 1 1/2 ounces Barbancourt 15-year rhum ½1/2 ounce lemon juice ½1/2 ounce simple syrup 3 ounces sparkling wine Method: Combine and serve in a Champagne flute with a brandied cherry. The Artillery Punch: A Rum Cocktail with History One of the oldest military organizations of record in Georgia, the Chatham Artillery, existed prior to 1775. The earliest mention of its “suave and deceitful brew,” however, was in 1819, when it was considered a worthy refreshment for President James Monroe, who, when he was in Savannah for the gala launching of the SS Savannah on its historical Atlantic voyage, was served the heady concoction on a festive sightseeing trip up the river. Today, Chatham Artillery members feel that genteel ladies made up the first beverage. Then, one by one, officers of the artillery sneaked in and added this and that to create Savannah’s most noted drink in two centuries: The Artillery Punch, served at Montage Palmetto Bluff, is a potent combination of Ron Zacapa Dark Rum, gin, rye, brandy, citrus fruits, brown sugar, Luxardo cherries and very strong English breakfast tea.
